What makes a good fudge?
Fudge originates from a toffee recipe that went wrong - making fudge right is probably a lot more tricky. Fudge shouldn't be grainy and it needs to be set perfectly. Even the weather can affect the cooking process!
A good fudge should be crisp on the tooth (to the bite) and then it should slowly melt in the mouth. When we get that real sweet craving, fudge does the job!
