Hertzoggies

These little South African gems were developed in the 1920's by the Cape Malay community and named after the prime minister of the time J. B. M. Hertzog

These delicate little pastry cases are filled with apricot jam, topped with a coconut meringue and baked until golden brown.

Delicious with a cup of tea and especially popular as a dessert during the holiday of Eid.
