Granny Evon's Ginger Biscuits

These biscuits are as iconic as Granny Franny's Shortbread. 

Granny Evon (my 2nd name's namesake) has been making these since before I could see over the counter in her kitchen.

There were a few rules.

• Do NOT use a mixer
• Always put in extra ginger
• One is never enough

Every camping holiday, every get together, every time we went to grans house. We knew where the tub was and we were always welcome to raid it. 

When I moved out of the house and into my first live in job rest assured I had a huge tube of her ginger biscuits with me.

Always put more ginger in and know that you can never have just one as they are so deliciously moreish.
